Instructions:

  1. Prepare the Vegetables: Start by preparing the vegetables. Wash and dice the carrots into small, bite-sized pieces. Wash and grate the zucchini. If you are using fresh peas, blanch them in boiling water for 2-3 minutes until tender, then drain. If you are using frozen peas, simply thaw them by running under warm water.
  2. Cook the Ground Beef: In a large skillet or pot, cook the ground beef over medium heat until it is fully browned. Break it up into small pieces as it cooks, which should take about 8-10 minutes. Drain any excess fat from the skillet.
  3. Cook the Rice: While the beef is cooking, prepare the rice. In a separate pot, bring 3 cups of water to a boil. Add the brown rice, reduce the heat to low, cover, and simmer for about 30-40 minutes, or until the rice is tender and the water is absorbed. Let it cool slightly.
